CEREAL CHEVDO

2 cups chex mix traditional

2 cups cork flakes

2 cups rice krispies

2 cups nuts ( deep fry)

2 cups potato chips

3 tea spoons chili powder

2 tea spoons turmeric powder

2 tea spoons  salt

3  tea spoons sugar

for tempering

2 table spoon oil

few curry leaves

3 to 4 green chilies ( round cut)

1 tea spoon cumin seeds

1 tea spoon mustard seeds

 

 

Place the cereal in a large bowl, sprinkle salt, chili powder, turmeric powder, sugar  keep on the side. Heat the oil in a sauce pan, add cumin seeds, mustard seeds, green chilies and curry leaves, as it starts to crackle, pour over the chevdo. Gently toss this mixture to ensure its thoroughly  blended. Let it cool and store in an air tight container.

Visheti

VISHETI

 

Last weekend I had a bit of time and made Visheti.  Now you ask, what is Visheti??…aha! Visheti is a deep fried finger biscuit that is drenched in thick sugar syrup. It is an East African delicacy

Visheti is usually served with Kahawa (see earlier post).  The sweet crunchy slightly doughy sweetmeat  is the perfect accompaniment to the bitter kahawa.  Almost like an amaretto cookie to your espresso.  Visheti is made with flour, raising agent, fat and sugar. The process is simple and the appearance rather stylish.  In my previous post I wrote how my dad would buy the piping hot kahawa from the vendors. As I would hang around with him, he frequently treated me to Visheti and I would devour this quickly often wishing he would buy some more.  Visheti for me is a nostalgic food item, in many ways like cupcakes are to most people these days. My siblings and I grew up eating visheti, kashata, mandazi etc and so I often make these at home especially when I miss Africa.

2 cups white flour

3 table spoons fine semolina

1 tea spoon backing powder

4 table spoons butter

1/3 cup milk

oil for deep frying

1 cup sugar + 1/2 cup water (for syrup)

In a large bowl combine  flour, semolina , backing powder and butter .Mix with fork until mixture resembles coarse crumbs. Add the  milk and make a soft dough. Divide in to approx  25 balls. flatten the ball between your palm ( can roll with rolling pin too) and make a small disk.  Press on the fork and gently roll away.  Deep fry on low heat until golden and crispy .Remove and keep on the kitchen paper ,set on the side.

To make sugar syrup

Combine sugar and water in a sauce pan and bring to boil until 3 strings consistency. Pour the sugar syrup on  top of vishti and toss lightly, the syrup will crystalize .Let them cool completely and store in an air tight container. Enjoy visheti with nice hot kahawa.

DUNGRI NA BHAJYA

 

DUNDRI NA BHAJYA

Serve these garam garam bhajya and have wow moment with every bite.

1 onion thinly sliced

1/2  cup gram flour

2 tablespoons  rice flour

2 tablespoons corn starch

1 table spoon fennel seeds coarsely crushed

2 tea spoon chili powder

1/4 tea spoon turmeric powder

2 tea spoon salt

1 table spoon lemon juice

2 table spoon water for binding the mixture

oil for frying

Mix all the above ingredients in a large bowl. Sprinkle water and mix well. Heat the oil, drop small amount of the mixture in a hot oil and deep fry till golden brown. Serve hot with chatni.

2 cups white flour

1 cup milk

1/3 cup sugar

2 tea spoons yeast

2 tablespoons butter

pinch salt

Melted chocolate

Mix yeast with a cup of warm milk, add sugar and cover .Keep on the side for about 5 minutes. This will rise and get foamy. In a mixing bowl combine flour and salt, add  the wet ingredients mix for about 5 minutes add butter and mix again for about 2 minutes. Once the dough   is ready place in a greased bowl  cover and let it rise for about 30 minutes. Once the dough risen, knead gently . Dust the work surface with flour and  roll the dough into about 1/2 inch thickness. Cut with doughnut cutter. Place  them in greased tray and allow them to rise for about 30 minutes. Heat the oil , drop the doughnut into the oil deep fry on a low heat flipping each side until golden brown. Take out and place on kitchen paper to drain . Deep in the melted chocolate and sprinkle desired  toppings.
