PINA COLADA

 

 

1 cup pineapple cut into pieces

1 cup coconut milk

1 cup ice cubes

2 tablespoons shredded coconut

Vanilla ice cream ( optional)

 

 

In a blender add pineapple pieces, coconut milk, shredded coconutĀ  and give it a churn and prepare a smooth pure. Add ice cubes and blend again. Pour in the chilled glass. Add a scoop of ice ream and serve. Its hard to turn down home made Pina colada !

 

TORTILLA CHIPS

RORTILLA CHIPS

 

1 cup corn flour

1/4 cup white flour

1 teaspoon chili flakes

1 teaspoon salt 1 teaspoon oil

oil for frying

 

 

Mix all the above ingredients in a large bowl, add little water at a time and knead into a firm dough. Cover and allow to rest for about 15 minutes. Take a small portion, make a small ball and dust little dry flour. Roll out each portion thinly. With the fork, make little impressions and cut into triangles. Deep fry on medium heat until golden brown.

 

 

Sauce

1tablespoon butter

1 tablespoon white flour

1 cup milk

1/4 cup cheddar cheese

 

 

Melt butter in a skillet, add white flour mix on a low heat for about 1 minute. Add the milk and whisk continuously for about 2 minutes. Add grated cheese mix and let the cheese melt. Turn the heat off and transfer the sauce in the serving bowl.
