BREAD PANEER ROLLS

 

5 slices bread ( trim the sides)

1 cup paneer grated

1 small potato boiled and grated

4 green chilies finely chopped

1/2 teaspoon chili flakes

1 teaspoon salt

handful cilantro chopped

Melted  butter for the rolls

 

In a bowl, combine all the above ingredients until well combined. Divide the mixture into 5 equal parts and prepare small cylindrical shape and   Set  side. Roll the trimmed bread slice, place the stuffing on the edge of the bread and roll gently . apply little water to the edge of the bread and seal the roll. Brush melted butter all over the rolls and place them into the air fryer or place on the lined baking tray and bake in the preheated  oven for about 15 minutes  or until golden brown and crispy. SABUDANA LADU

SABUDANA LADU / SAGO

 

1 cup sabudana soaked overnight

1/2 cup sugar

2 tablespoons melted ghee + 1 teaspoon for later use.

Pinch of yellow food color

Pinch of cardamom

few strands of saffron

Raisins optional

 

In a large skillet place  2 tablespoons of ghee, add soaked and drained sabudana and sauté gently on medium heat until they turn translucent. Add sugar, saffron and color and mix all together. Keep stirring until the mixture thickens. Add a teaspoon of ghee  mix well and turn off the heat. Transfer the mixture in a wide tray  and let cool completely. Once cooled take a scoop of mixture in your palms and roll small ladoos.  Enjoy.

 

 

 

 

 

 

 

 

 

 

SABUDANA BHEL

SABUDANA BHEL ( tapioca pearls)

 

1 cup sabudana  ( soak for few hours and drain )

1/4 cup roasted peanuts

1/4 cup roasted cashews

1boiled potato cubes

3 green chilies finely chopped

handful cilantro finely chopped

1/2 teaspoon salt

1 tablespoon fresh lemon juice

Pomegranate ( optional)

1 tablespoon oil

 

Heat  tablespoon  of oil in the skillet on medium heat, add sabudana and sauté stirring continually until sabudana becomes transparent and cooked completely. Add potato cubes, nuts, salt, chopped green chilies, chopped cilantro and lemon juice. Mix all together and turn the heat off. Serve immediately with the chutney of your choice.

 

 

BARFI

BARFI

This year I will be making several mithais (sweets) amongst which will be this simple yet tempting chocolate barfi.

This is a delightful sweet without the traditional use of ghee (clarified butter).  It is very more..ish, simple to make using very few ingredients.

1 tin condesed milk

1 1/2 cup dry  ground nuts

1/2 cup dry coconut

1/2 cup cranberrys

Presher cook condensed milk (5/6 whisel)  Make sure you have enough water in the preshercooker as this could be potentially hazardous.  My suggestion to anyone who is not familiar with cooking condensed milk is to place an unopened tin of the condensed milk in a saucepan, fill the pan up with water and let the water come to a boil.  Then lower the heat to a gentle simmer for about an hour topping up the water level so that the tin of milk remains submerged at all times.  I cannot emphasise enough the importance of the water level.

Step 2:  let the tin of condensed milk cool then empty container in a big bowl,add above ingredints. Mix well and give any shape.

Melt the chocklate in the microvawe deep the barfi in the melted choklate.Can add any decoration on the top.
