3 bowls ground cashew nuts

3 bows melted ghee

1 bowl sugar

1/2 bowl water

You will need 2 pots to start this mesub. In a heavy large pot  make sugar syrup. on second pot hear ghee on a low heat.

In a  large heavy pot add sugar and water stirring till It reaches one thread consistency. Add the ground cashew nuts in the sugar syrup and keep stirring till it becomes thick.   Start adding piping hot ghee and keep stirring till all ghee is absorb. when you pour ghee the mixture will look frothy and will see holes in the mixture and colour will change too.While pouring ghee make sure you are poring from the same direction( if you start clock wise finish that way ) Take the pan off the stove and pour the mixture in a tray .Spread evenly and let it cool for about 8 to 10minutes .Cut into square or any desired shape .Tilt the tray  keep small bowl under the tray and all the extra ghee will  come out.

Note: Take little water in a bowl drop syrup in the water  if it spread out then its not done yet.

3 cups wheat flour

1 cup semolina flour

1 cup jaggery

1cup ghee

1 1/4 cup water  ( warm)

Oil  for frying

1/2 tea spoon cardamom

1/2 tea spoon nut meg powder

1/2 tea spoon  javitri

 

2/3 table spoon poppy seeds

In a big bowl,put wheat flour, semolina flour, and ghee mix all together .Then add warm water little at a time and make firm dough. Divide the dough in to 18 equal  portions. Take hand full dough and press  tightly with your fingers  and make muthya. Keep on the side. Heat  the oil in kadai and deep fry on a low heat until golden brown.Break them in to  small pieces and grind. Sieve the ground mixture in the chaini.and keep on the side. Heat the ghee and jaggery  on low heat for2 minutes add to the ground mixture.add  cardamom powder ,Jaifer and javitri. mix well. Shape in to round ladu and sprinkle poppy seeds on top. Makes small 75 ladus.

Home made Schezwan or Schezuan food is amazingly delicious.  In our household, we love the Indo-Chinese fusion.  I got this recipe from my friend Dharti. The Indo-Chinese fusion goes back a long way in Mumbai and is currently gaining huge popularity pretty much everywhere.

Schezwan food is delicious, tangy , spicy and hot.  The Schezwan sauce can be a pick me up for bland vegetables or paneer and really adds depth and warmth to the food.  For those who love Indo-Chinese food, this mogo dish is perfect.  Served on its own or with a small side salad it makes a filling meal.

Here is what you need and how can make this easy peasy dish.

The sauce

2 table spoon celery finely chopped

1 small onion  finely chopped

1 tea spoon ginger finely  chopped

1 tea spoon garlic finely chopped

3 green chillies  finely chopped

4 table spoon tomato sauce

4 table spoon chilli sauce

3 table spoon soy sauce

1 table spoon oil

1/2 tea spoon salt

2 large crushed tomatoes

1 table spoon corn flour mix with little water

Heat the oil in a pan and add celery and onions  saute for a minute,  add  garlic  and ginger saute little more than add all the above ingredients except corn flour.  Toss the ingredients so that they mix well ,cook for couple  minutes and add the corn flour , stirring continually for 2 min.

The Vegetables

1 table spoon oil

3/4 tea spoon  finely chopped garlic

3/4 tea spoon finely chopped ginger

cassava 5 pieces appx 3 in

bell peppar  ( all 3 colour)  cut in cubes 1 cup

Onions cut in cubes   1 medium size

Spring onions chopped 1/2 cup

Boil the cassava ,drain all the  water and let it dry.Deep fry in oil and set on the  side.

Heat oil in a pan over a high flame and add finely chopped ginger and garlic  and sauté on a medium heat approx. 1 min. Add the vegetables , onions , bell peppers, red, green, yellow ,mix well, cook on high flame for couple minute stirring occasionally .Add fried cassava mix well  .Add  prepared schezwan sauce cook for 2 to 3 min .Lastly add chopped spring  onions and serve hot.

Note: If you don’t want to make sauce from scratch  you can get schezwan souse in a powder form in any Indian grocers.
