STRAW BERRY JAM

STRAWBERRY JAM.

photo 1 photo 2 photo 3

There is nothing to beat a home made jam.  This year, we harvested a load of strawberries, we ate a lot of these too but we still had a lot of strawberries left over.  I decided to turn them into a preserve as it really is very easy to do so and you can actually smell the freshness of your hand picked berries in the preserve.  Serve this with warm toast or even as an icecream sauce and you will want to have seconds.

Ingredients

4 cups mashed berries
3 cups white sugar
1/8 orange juice

Crush the berries. Stir the berries, sugar and juice together in a heavy pan over low heat until the sugar is dissolved. Turn up the hear to high, and bring the mixture to a boil, stirring often until the mixture thickens. Pour into clean container cover and keep refrigerated.

CHOCOCOCO BARS

photo 3

Now here is a sweet that goes down rather well at home.  The small bars with a coconut filling are similar to the all time favourite Bounty chocolate that we all love.   People get very fussed about the tempering of chocolate etc so I have done away with all that and made a “chococlate flavoured bar”.  This will make an extra special gift for someone who likes coconut.

At the moment, home made sweet gifts are really the in thing.  Beautifully packaged, slightly rustic looking gifts or perhaps pack them in trendy little chocolate boxes that are now so readily available. You can make them in any shape you want, wrap them up in colourful candy wraps, place them in a gift box or package them in clear cello bags tied up with beautiful ribbon.  These bite size bits make great gifts especially at Christmas.

The recipe is very simple and here is how.

CHOCOLATE
filling
16 table spoons coconut
6 table spoon milk powder
5 table spoon icing sugar
little milk ( apx 1 tea spoon)
mix all the above ingredients keep on the side.

Mix together the following for the outer coating:
8 table spoon milk powder
16 table spoon icing sugar
8 table spoon drinking chocolate
1 table spoon cocoa
1 tea spoon milk

Mix all together, divide them in to small balls and keep them on the side.

Take small amount of the mixture and press with your finger lightly form this to make a shell, fill with the coconut filling press edeges to close.
