Vegetable Khichdi

Simple and quick to make and also delicious comfort dish ,garma garam masala dar khichdi made with rice ,lentils and lots of vegetables.

Wash rice and dal and soak in the water and keep on the side. Heat ghee in the pressure cooker ,once heated add clove, cinnamon, cumin seed, curry leaves and star anise.As it stars to crackle add ginger paste, garlic paste and chili paste. Soute and add all the cut vegetables mix well add rice and dal , mix again and add salt, garam masala, give it a good stir and add tomatoes and water  .Close the lid of the pressure cooker and cook on high heat to 3 whistle. turn off the heat and wait until the pressure been released . Open the lid and enjoy masaledar khichdi with chash.

 

1/2 cup rice

1/2 cup moong dal (with out skin)

1/4 cup tuwer dal (split peagean peas)

2 cups water

1 medium size onion (cut cubes)

2 tomatoes  ( cut cubes)

1 tea spoon ginger paste

2 tea spoon chillie paste

1 1/2 tea spoon salt

1/2 tea spoon turmeric powder

2 cup milk

1 table spoon yogurt

Boil the milk on medium heat while stirring occasionally. Keep on the side and let it cool until is Lukewarm. In a bowl put the yogurt and add the milk. Give it a good stir ,cover the bowl and let it rest over night in a worm place .Refrigerate and use as required.

My sister Jyoti and  Jaishree ben her sis in low who lives in Mwanza recently made these cutlets  for a competition during the East African sports festival hosted by the Lohana community in Uganda. This recipe won a prize in the cooking contest an my sister has now been informed that her creativity will be shared on television shortly.  Exciting news!!

So, as soon as the pictures reached me I was on the phone asking for the recipe.  After having tried it out, i confirm it is most delicious and quite easy to make.  I am sharing this recipe with you all so that you can try and create this prize winning dish for yourself and your loved ones.

Ingredients1  4 inch piece of cassava boiled
1 raw banana boiled
1 tea spoon chili paste
1/2 tea spoon garlic paste
1 tea spoon sugar
1 tea spoon lemon juice
1 tea  spoon salt
2 table spoon corn flour
hand full cilantro finely choppedOil for frying
In a bowl mash together the banana and cassava and keep that aside.Mix the rest of above ingredients.(except the oil) with mashed cassava and banana and ensure everything is well mixed.  Now divide the mixture into 15 small portions and give it an oval shape.
Heat the oil in a deep pan and fry the cutlets until golden. Drain on kitchen paper and serve hot with the yoghurt chutney.
Yoghurt sauce/chutney
1/2 cup yogurt
1/4 tea spoon salt
1/4 tea spoon chili paste
hand full finely chopped cilantro. Combine all these ingredients together in a small bowl and stir till well blended.
SALAD1/4 red bell paper
1/4 green bell paper
1/4 yellow bell paper
3 inch piece cucumber
a small  carrot
1 cup sweet corn ( boiled)
4 table spoon olive oil
2 tea spoon lime juice
salt to taste
1/4 tea spoon black paper
1/2 tea spoon honey
1/2 tea spoon dry red coarsely ground paper
hand full nuts
Finely dice all the vegetables, add the rest of the ingredients, combine and put this to one side to use as stuffing for the tomatoes.Take small salad tomatoes and cut the top with sharp knife, scoop out little   pulp from the tomato and fill the tomato with the salad.for servingSpinach

platterPlace the spinach and grated carrots on the platter. Stuff the tomatoes with the salad. Arrange the cutlets on top of the spinach bed and then place the stuffed tomatoes around the cutlets. In a small dipping bowl, add a serving of the yoghurt sauce.

Heat the butter in deep heavy bottom pan on medium heat, stirring occasionally. Once the milk solids separates and settles at the bottom of the pan and butter becomes clear golden color, at this point the ghee is done. Strain the ghee in a glass jar,and enjoy fresh home made ghee.
