OAT RAISIN COOKIES

OAT RAISINCOOKIE

 

2 cups oats

1 cup white flour

2 sticks butter   ( 2 cups)

1/4 cup white sugar

1/4 cup brown sugar

1 teaspoon vanilla extract

1/2 teaspoon salt

1/2 teaspoon baking soda

1/2 cup golden raisins

1 tablespoon ginger powder ( optional )

 

 

In a large bowl place butter and sugar, beat together until light and fluffy. Combine the flour, salt, baking soda and vanilla extract and whisk all together. Add the oats to the butter mixture and beat just until combined. Add raisins and mix well. scoop out the dough with ice cream scoop leaving about 2 inches apart onto a baking tray  lined with parchment paper. Bake  in the preheated oven to 350 degrees for about 10 to 12 minutes. Or until golden around the edges. Transfer to the cooling rack and allow to cool. Once cooled completely place them in an air tight container.

 

 

 

BREAD

HOME MADE BREAD

 

1 cup wheat flour

1 cup bread flour ( white flour)

1 cup warm water

1 teaspoon dry active yeast

1 teaspoon salt

For garnishing

1 tablespoon sesame seeds

1 tablespoon milk or butter

 

In a large bowl   place salt and yeast side by side. add water and stir well to dissolve the salt.   Add flour and mix all together with your hands. Once the dough is mixed, cover with lid and allow to rest for 2 hours. After 2 hours knock down the dough with little dry flour, smooth with your fingers tucking the dough under and getting smooth on top. Place in baking tin, leave for about 1 hour. Brush milk or melted butter on top and sprinkle   sesame seeds . With sharp knife give little cut on top and place in the preheated oven To 400 degrees. for 30 minutes. Enjoy home made delicious bread.

 

PINEAPPLE JAM

PINEAPPLE JAM

Home made pineapple jam is so much easier than you would think.

 

Ingredients

4 cups mashed pineapple
2 cups white sugar
1/8 orange juice

1 tablespoon orange zest

 

Crush the pineapple. Stir the crushed pineapple, orange zest, sugar and juice together in a heavy pan over low heat until the sugar is dissolved. Turn up the hear to high, and bring the mixture to a boil, stirring often until the mixture thickens. Pour into clean container cover and keep refrigerated. Enjoy delicious jam !
