VEG FRITTATA / NZEGE

 

So today I wanted to make something rather different for breakfast and I thought back to my time in Tanzania where locals used to make a type of frittata called Nzege (eggs and chips something quite similar to a spanish omelets).

 

Since we don’t eat eggs in our household, I was determined to create something similar to Nzege but a vegetarian friendly one.
I must say the effort was most certainly worth it.  Its a rather filling dish and just to add to the feel good factor, it is made with oats.  Go on, give this a whirl, I promise you will love it!    The best thing about it is that you can add other veg and omit the potato although that is what makes it rather delicious.
 

 

 

Ingredients:
1/2 cup oat flour
2tbsp semolina
Approx 1/2 cup buttermilk
1/2 teaspoon  salt
2green chilies finely chopped
1 small onion finely chopped
1 tomato – diced
Handful of chopped cilantro
1 tablespoon  ghee
1/4 teaspoon Eno
2 tablespoon  mozzarella cheese grated
Fries/ chips made with one small potato.

Grind the oats, and make flour. Place in a large bowl, add semolina, butter milk, salt and mix well. Set aside for about 10 minutes. Add chopped chilies, onions, tomatoes, cilantro,  and mix well. Prepare flowing consistency of batter. Add Eno and stir well. Heat the nonstick skillet, add ghee pour the batter and spread with the back of the spoon. Let cook, and flip on the other side and cook until golden brown. Place chip/ fries on top, sprinkle cheese and broil until cheese melts.  Enjoy Nzege, serve immediately  .

My niece Neha Kotecha always shares her homemade health conscious recipes with me. One of  my favorites is her homemade granola!! Thank you  so much for sharing this with me, can’t wait to try this for breakfast with plain or vanilla yogurt or simple glass of milk !

 

 

2 cups oats

1 cup almonds chopped

1 cup walnuts chopped

1/2 cup sunflower seeds

1/2 cup pumpkin seeds

1/2 cup flax seeds

1/2 cup dried cranberries

4 tablespoons coconut oil melted

4 tablespoons honey

1/2 teaspoon turmeric powder ( optional)

 

In a large bowl, place oats, almond,walnuts, sunflower seeds, pumpkin seeds, flax seeds, dried cranberries, set aside. In a small bowl combine oil and honey, whisk until well combine. Add the mixture to the prepared oats and nuts mixture and mix well. Place the mixture in the ungreased baking tray. Bake for 15 to 20 minutes in the preheated oven at 300 degrees, tossing in between. Remove from the oven. Once cooled and crunchy store in an airtight container. Enjoy quick breakfast on the go.

 

SCHZWAN BREAD CANAPES

Schzwan bread canapés

 

20  bread slices

2 tablespoons butter

Take two round cookie cutters, big one and little smaller one. Trim the sides .Take the big disc and apply butter and place the bread ring on top. Prepare all the canapés and place them in the baking tray and set side.

 

For the stuffing

1/2 cup noodles boiled

1  onion finely chopped

1/2  cup bell pepper diced

1/4 cup sweet corn

1/2 cup  cheese grated

2 tablespoons schezwan sauce

1/2 teaspoon salt

 

 

Heat the oil in the skillet on high heat. Add onions and souse until onions becomes transparent. Add bell peppers, noodles, corn,salt and schezwan  sauce and stir fry for about two  minutes. Turn the heat off and allow the  mixture to cool. Fill the  stuffing in the prepared canapés, top with grated cheese .Apply butter on the sides of the  canapés   and place the baking tray in the preheated oven at 300 degrees,  until the cheese is melted and the bread is golden and crispy. Enjoy crispy, tasty vegie canapés.
