BHINA NU SHAK

 

 

2 cups bhinda

1 onion thinly sliced

2 table spoons oil

1/4 teaspoon mustard seeds

1/4 teaspoon turmeric powder

3/4 teaspoon salt

1 teaspoon chili powder

1 teaspoon dhana jeeru

1 tablespoon pickle masala or achar masala.

handful cilantro chopped

 

Wash and dry the bhinda and cut them in length wise

Heat the oil in a wide skillet. Once heated add mustard seeds. Let it crackle add bhinda  cook on medium heat stirring occasionally. Once bhina are almost done, add Onions and all the  above ingredients  let them cook till the bhindas are nice a crispy, but not over cooked.  Turn the heat off and transfer in a serving bowl. Garnish with cilantro .Enjoy with garma garam rotis .

 

 

SEMOLINA CHOCOLATE COOKIES

SEMOLINA CHOCOLATE COOKIES

 

1 cup fine semolina

1 cup white flour

1/2 cup shaved chocolate or chocolate chips

 

 

1 cup butter

1 cup sugar

2 tablespoons yogurt

1/2 teaspoon baking soda

1 teaspoon baking powder

 

 

In a large bowl place butter and sugar, beat together until light and fluffy. Combine yogurt, baking soda, baking powder flour and whisk all together. Add shaved chocolate and mix well. Scoop  out the dough with an ice cream scoop, living about 2 inches apart onto a baking tray lined with parchment paper. Bake  in the preheated oven to 300 degrees for about 20 to 25 minutes. Or until golden around the ages. Transfer to the cooling rack and allow to col completely .Transfer in an air tight container. Enjoy chocolaty, thin crispy cookies with a cup of hot masala chai and cold milkshake.

 

WHEAT ROLLS

WHEAT ROLLS

 

 

1 cup wheat flour

1 cup white flour

1 cup butter milk

1 teaspoon active dry yeast

2 tablespoons sugar

1 teaspoon salt

1/4 cup oil

little milk for brushing on top of the rolls

sesame seeds or poppy seeds for garnishing

In a large bowl, place flour, yeast, sugar and salt and mix well. Add butter milk, stir in well and add oil and mix all together until the dough is soft and pliable. Cover the dough and let rise to double in size for about 4 hours. ( Depending on the whether) Once the dough has doubled, divide into 6 equal parts. Prepare round balls and place on a greased baking tray. Allow to rise for about 40 minutes. Gently brush milk on each rolls and  sprinkle sesame seeds on top. Bake in the preheated oven to 350 degrees for about 30 minutes or until done. Enjoy home made rolls.

 

NOTE In the bottom of the oven, place baking tray filled with water . This will create steam to make crunchy bread on top.
