AVOCADO ICE CREAM

 

1 avocado pilled and pitted

14 ounce sweet condensed milk

1 tablespoons lemon juice

pinch salt

2 cups heavy whipping cream

 

Puree avocado, condensed milk, lemon juice and salt in a blender until smooth. Set aside

Whip the heavy  whipping cream until firm peaks form. Combine with prepared avocado mixture. Pour the mixture in the container and place in the freezer until firm.

 

 

FARARI DAHI WADA

FARARI DAHI WADA

 

1 cup samo

2  cups water

2 tablespoons yogurt

2 medium size potatoes cut in to cubes

1 teaspoon ginger paste

2 teaspoons chili paste

1 1/2 teaspoon salt

handful cilantro chopped

 

Place all the above ingredients in the pressure cooker and cook until 3 whistles. Once cooled, place in a large bowl and mash well .  Divide the mixture into equal size balls and deep fry these till golden brown. Serve the vada piping hot top with tamarind  chutnis, green chutni,peanuts, and yogurt mix.

SURPRISE INSIDE PENDA

 

   

We are rejoicing as we celebrate the arrival of our brand new grand nephew Arjun the son of our neice Krupa and jamai Prahlad Nathwani.
Penda or jelebi are generally distributed to announce a new birth. Nowadays however, birth announcements are also celebrated with other mithai and or chocolates. To celebrate Arjun’s arrival ,  I decided to make an extra special version of the traditional penda, a mouthful of sweet with a surprise inside of traditional spices, nuts and rose petals.  The entire Vithlani family congratulate Krupa and  Prahlad and wish them all the happiness that a growing family brings.

Stuffing

4 tablespoons gulkand

4 tablespoons ground mixed nuts

few strands of saffron

1 teaspoon cardamom powder

1/4 teaspoon of nutmeg powder

Combine all the above ingredients. Divide in to approx. 25  portions and roll each portion into a ball. Set  aside.

 

 

PENDA

2 cups milk powder

1 can sweet condensed milk

1 stick butter

 

Combine  the condensed milk and butter in a microwave safe bowl, add milk powder  and stir well. Place the mixture in a microwave for 1 minute, remove and stir. Repeat 6 more times. ( that’s total 7 times). Remove from the microwave and stir well,  let it cool little.  Apply little ghee on your palms, take a spoonful of the mixture and form a round ball and lightly flatten with your palms. Place the stuffing in the center and bring the edges together. Form a round ball and Flatten. Make design and garnish with pistachio’s.
