CAPRESE OLIVE SKEWERS

 

As most of you know I celebrated my birthday in February and my daughter in law Komal had planned a surprise party for my special day.  You would have seen the pictures I posted on my wall and the video showing how overwhelmed I was by this beautiful gesture.  What a great party that was! Thank you.

Apart from the great  company of my loved ones, one of the things I vividly remember and what still makes my mouth water are the mozzarella, olive and tomato skewers that Komal had prepared and it is this recipe that I would like to share with you all.  These are quite simply the best home made antipasti I have tasted and rather easy to make too.  I hope you will all try these out when you next plan an Italian meal.

 CAPRESE OLIVE SKEWERS

INGREDIENTS:
1 pack fresh mozzarella cheese balls
12 oz package cherry tomatoes
Pimento stuffed olives (as needed)

FOR MARINATING:
1/4 cup extra virgin olive oil
1 tea spoon minced garlic
1 cup fresh finely chopped parsley
1 tea spoon salt
1 tea spoon black paper ground

Whisk all of the above ingredients together and then add the fresh mozzarella balls and cherry tomatoes. Let them marinate for about 40 minutes. Skewer mozzarella balls, olives and tomatoes how you like.

                                                       PESTO SAUCE
3 table spoons pine nuts
1/4 cup parmesan chees
2 cloves garlic
1/2 cup olive oil
salt to taste.
Place all of the above ingredients in a food processor and pulse until they are thoroughly combined.
