Apart from the great company of my loved ones, one of the things I vividly remember and what still makes my mouth water are the mozzarella, olive and tomato skewers that Komal had prepared and it is this recipe that I would like to share with you all. These are quite simply the best home made antipasti I have tasted and rather easy to make too. I hope you will all try these out when you next plan an Italian meal.
CAPRESE OLIVE SKEWERS
INGREDIENTS:
1 pack fresh mozzarella cheese balls
12 oz package cherry tomatoes
Pimento stuffed olives (as needed)FOR MARINATING:
1/4 cup extra virgin olive oil
1 tea spoon minced garlic
1 cup fresh finely chopped parsley
1 tea spoon salt
1 tea spoon black paper groundWhisk all of the above ingredients together and then add the fresh mozzarella balls and cherry tomatoes. Let them marinate for about 40 minutes. Skewer mozzarella balls, olives and tomatoes how you like.
PESTO SAUCE
3 table spoons pine nuts
1/4 cup parmesan chees2 cloves garlic1/2 cup olive oilsalt to taste.
Place all of the above ingredients in a food processor and pulse until they are thoroughly combined.
